Are those leaves quite hard to the feel? Do they have a spicy smell when crushed?

It looks a lot like Bay to me. But don't eat it until you have had it professionally identified. All laurels are poisonous except for Laurus nobilis (Bay). Also, Bay is very slow-growing. That plant could be 3-4 years old.

I'm not 100% sure of it, actually. Usually the new growth of bay is a reddish/yellowish colour.

It has no smell and leaves are hard but not that hard. It does not look like bay to me because I used bay leaves. It is not 3-4 years old. The seed packet which I got from last year's trade the label on it said, 'silver edged thyme' but it does not look like thyme either.

Who knows if it is a veggie plant or flower plant? I want to leave it as it is to bloom and let's see what kind of bloom comes in it, it might give some clue.

It's not bay. Bay is a tree so even on a young plant the leaves would be coming off a woody stem alternately, not rising as a clump from the base. A healthy 3 - 4 year old bay would be several feet tall.

Also it is definitely not thyme. If it has no scent it may well not be a herb at all, but a perennial of some sort. You could try it out on the 'Name that plant' forum.

By the way there seems to be a little tree seedling in amongst the plant. Looks a bit like a Crataegus, or Sorbus.

Could it be a Rhododendron?? I'm sure that's a bad guess!
