help with elderberries

I am a new member and need to ask someone about harvesting elderberries. I am a wine maker and plan to pick wild elderberries this year for my wine project. I have been watching several patches of wild elderberries which are now getting ripe. My question is this! In the circular cluster of berries that are on a plant, I am finding that only about 75% of the berries are ready to pick and the other 25% are still very green. Should I pick the cluster and harvest the ripe ones or should I hold off a few days and wait for the entire cluster to ripen? I am supprised that all of the berries in a cluster don't ripen at the same rate. I fear that the birds will get them if I wait to long, however, I hate to waste the unripened berries. Wait a few days or pinck now and waste some berries?
