Pickling Onions

My husband has requested me to pickle onions. He likes my homemade pickling spice recipe and wants me to use it with red wine vinegar (I have 5%). Does anyone have a good recipe, and could I add garlic or jalapenos/chilis as and option in some jars? Thanks!

You can use the Pickled Pearl Onions recipe or just use your pickling spices in place of the ones in the recipe. Dried spices are no problem. Dried garlic and peppers? Sure. Fresh peppers and garlic would depend on the ratio of vinegar to water in the recipe you use. The NCHFP one has plenty of vinegar to handle a couple of chilis and a clove or two of garlic but don't get carried away. ;)
