That's all we do and ours is a fine powder. Maybe your coffee grinder is running long enough. Mine has an automatic setting, so it shuts off when it's finished.

Flakes are good...a lot of people prefer them to powder. They need to be crispy dry for powder. Maybe you could dry the flakes more and re-grind. What type of peppers did you dry? I just hang thinned walled ones like cayennes and guajillos and let them air dry, usually for a number of weeks.

They are small peppers. Lemon Drop, Trinidad Perfume, Chihaulca rojo,
Beni Highlands. I will dry them some more to get them crispy and see
what happens.

When I make citrus dust, I make my citrus pieces get super crispy dry - they need to be to the point where they just crumble apart. Then I put them in the coffee grinder and grind into dust. If the citrus isn't crispy dry, I end up with flakes.

Thank you. I let them dry some more in dehydrator. Made a little bit
of powder. Very cool. Now I can make more. Two on left are very hot,
two on right are not

Yum! Love Lemon Drop powder!
