Do you like and use relishes? We go through a ton of different relishes in our house and it is a great way to use up lots of end of season cukes.

Can't help with the slippery jacks as I've never made them. But we do like the mock apple rings recipe using the big cukes, cinnamon, and red hots. Would that appeal to you?

Otherwise it is pickles and more pickles of various types.

I've made sweet pickle relish. I wouldn't mind a dill one too...if I can use the ripe cukes.

I'd be interested in the mock apple rings too, I'll check around for a recipe. I have an 11 and almost 13 year old, so they would like those.

I was worried about making pickles with the ripe cucumbers, as I've heard they make a sub-standard pickle.

My hubby is 20% into his tour in Baghdad, so unfortunately I let the cukes get away from me ;) He is looking forward to coming home in late spring and enjoying our preserved harvest....so any help would be appreciated.

We like relishes, pickles of all kinds, and anything else you can suggest (we are not picky at all!)

Mustard relish?

Oscar Relish. We substitute cukes for 1/2 the peaches and 1/2 the tomatoes and use 1 cup of bottled lime juice for 1 cup of the vinegar. This is a personal recipe, not an approved one which is why we increase the acid with the bottled lime juice which is more acidic than vinegar. It also improves the taste. ;)

Pepper & Onion Relish. We substitute cukes for 1/2 the onions. It's a 100% vinegar so safe.

Dill Pickle Relish

Mock Apple Rings

2 gal. sliced cucumber rings, peeled and centers removed
2 c. lime
8 1/2 qts. water

Mix lime and water; pour over cucumbers in a large non-reactive container. Let stand for 12-24 hours. Drain; rinse well with cold water. Refill container with fresh water and let soak for 3-4 hours; drain and rinse well again.

In large pot mix 1 cup vinegar 1/2 bottle red food coloring; pour over cucumber mixture with just enough water to cover; heat and simmer for 2 hours. Meanwhile make the syrup.

2 1/2 c. cider vinegar
2 c. water
1 sm. pkg. "red hots" candy
5 lbs. sugar
8-10 sticks cinnamon

Mix and bring syrup to a boil. Pour over prepared cucumber rings; let stand overnight. Drain and reheat syrup and cucumbers for 3 mornings. The last morning, heat to boiling and seal in jars. Process in BWB for 10 mins. Makes 6 quarts.

This is alaso a personal family recipe, not an approved one, but since it is better than a 1:1 ratio of vinegar to water I think most would consider it safe. If not hopefully they will let me know. ;)
