I looked at the NCHFP and it says that as long as you add bottled lemon juice to the jars, you can safely can asian pears in whatever syrup you want. In Korea, they like to stick black peppercorns in the quartered pears before poaching them. As long as I acidify, would it be safe to can these using the standard directions for Asian pears?

After acidifying, would these be safe to can? I am worried about the dried red dates.
