I'm working my way, slice by thin slice, through a big hunk of lox I made a few days ago. It's so luxurious, piling up lox on a nice bagel or slice of pumpernickel.
Lox is easy to make. If you like it, I encourage you to make your own. Buy a nice piece of salmon fillet. Coat it thickly with a 2:1 mixture of kosher salt and sugar. Put the fish in a Zip Lock bag. Put the bag between two Pyrex pie plates with some weight on top (can of tomatoes or similar) and refrigerate for two or three days. Rinse off the salt and pat the fillet dry with paper towels. There you have it! Lox! Mmmmm.
