I use a spray called Chew-Not, which is very effective and works for six months after application. However, it is not organic, and may be toxic, so I certainly would not use it on edibles. I used to get it from Mellinger's Nursery, but I think they are out of business. You can still buy it though.

Without effective fencing around the garden it will be a constant struggle. Deer wander around and nibble here and there, like people at a party. Different ones will go for different items at different times. If you use something like a spray or other repellent you have to keep re-using it. If the deer get desperate during a hard winter (an odd thing is that although they are native to cold climates they don't have much to eat during the winter and routinely starve) plants that were ignored for years may be stripped.

You are at the mercy of the deer and all the variables involved as long as they have access to your plants.

I surround plants with welded wire fence circles. It comes in various heights according to what you need. with a tree, eventually it would grow tall enough not to be that accessible. I also have a low cost alternative where I put bamboo sticks in a circle around the plant then run wire around the sticks going up in one foot intervals. It's ugly but it works. You may find that you need to protect the trunks of trees as well as deer like to rub the velvet off their antlers on them and can really scrape the bark off.

Sprinkle blood meal on the leaves and around the tree. Not a whole lot, maybe about 1/2 cup, and then plan on refreshing that about once per month. Blood meal will also keep rabbits away from other plants.
