I'll let others more familiar with the northwest make suggestions of what else you can plant. But, I will say this...

Plant lettuces constantly! When one goes out of control, just plant another in its place. I planted mine in little rows quite close to each other because I didn't like big leaves, I liked harvesting them while they were tiny. So, when they outgrew their welcome or became bitter, I just tugged them out, added a pinch of compost and replanted new seed.

For the bolting, I try to pinch the tops frequently. Doesn't always help though.

It's getting just a little late for direct seeding of most cool season crops but almost time for planting the starts.

Still OK to seed greens (lettuce, spinach, mustard, arugula, endive) now, as it is to sow peas, radish and carrots. Use succession plantings - sow a row, wait a week or 10 days and sow another row. That will greatly extend your harvest period.

Beginning later this month, most retail garden centers will have fall veggie starts available for planting. These will include the cole crops (cabbage, kale, chard, brussel sprouts, broccoli, etc.) and perhaps some roots like beets, turnips, etc. Also onion and garlic sets.

All of these plants can grow well into fall and in some cases, even through winter. Many of the cole crops develop better flavor if they are allowed to go through a couple of good frosts before harvesting.
