My initial Capital cooking report

Ok I have had the Captital 48" range in the kitchen for about a month. It is configured with 6 burners and a griddle. It is a Precision model however to stay within somewhat of a budget I ordered the non self cleaning without the rotisserie. All other actual cooking features are the same. Did not really use it for other than a little quick heating of soups etc. until the last week. Out remodel is being done in phases and I am doing alot of the work myself. Just got countertops installed about a week ago and still do not have a backsplash, hood or flooring in place. Because of this our cooking has been somewhat limited.

Now on to my initial impressions.

First off appearances, it looks really substantial and nice. Have had several people walk in and so far everyone of them have been impressed and thought it was beautiful. I really went over it very carefully and have not found any flaws.

Now on to performance. I have been cooking actual meals for the past week and wow. I am very happy with the cooktops performance. I am considered to be the more fancy cook in our family and it has been nice to have a range that offers this type of performance. This cooktop fits my style. I really like to have the same performance from all the burners so I don't have to juggle and remember which is which. That is probably just a personal thing. For the past three days I have cooked meals that utilized 5 burners at a time and it went like clockwork. My wife who is not as fussy has also been happy. She is a good cook but more of a just get it done everyday cook type. Her first comment was how well the burners maintained an even temperature. Have cooked some sauces but none that were too sensitive yet. Did do some very long almost all day simmering for some of my barbeque sauces. Have used the oven very limited. Fixed a couple dishes but nothing too fancy. I do like to bake but as of yet have only used it for a batch of oatmeal cookies. I did try out the convection with these and it performed well. Used all three racks at one time both to test the oven and save myself some time. I have read some questions regarding preheating times for the larger ovens. I did not actually time it but the little clock in my head told me the oven heats in about the same amount of time as my old 30". Convection fan can be heard but it is not overly loud. Our kitchen is open to much of the house so noise can be a problem for us. Conversations can easily be carried on standing next to it. I also was concerned about reports of some ranges having hot knobs. The knobs on this range have not gotten hot in any situation yet. I expect to do more baking in the next couple of weeks. I have several requests for pumpkin rolls, pies and christmas cookies. Hopefully I can find the time. The only thing I have not used is the griddle. Without a hood it sets off all the smoke alarms so I will just have to wait.

Cleanup of the cooktop is really great. Besides being the more fancy cook in the family I am the messiest. I like the sealed burners for this reason. I know others feel they get better performance from open burners. Personally I have not found there to be a substantial difference when comparing products of equal quality. Have not had to clean the oven yet so can't comment. The stainless wipes down and cleans very nicely. As I said we do not have the flooring in yet so we currently have bare concrete floors through most of the house. We also live in a very dusty area so we do have to wipe things down quite a bit.

As for cons I really can't say much. The cooktop has some squared off areas that I feel make things harder to clean. I prefer rounded surfaces. This is pretty normal though with most ranges. Another personal thing is I would like to be able to adjust its height higher than 36 1/2". I know that counter heights are usually 36" so this works for most. I find that nowdays some cabinet installations combined with granite can actually be as high as 37 1/2". If this is the case and for instance one just keeps with stained concrete flooring it presents a minor problem. Another little personal preference is that I do like having a built in clock and timer. I just find it more convenient. The lack of that is pretty common with pro styles but I still like them.

    It's nice to hear from a fellow Capital owner - seems there are so few of us out there. Don't understand why, but then again, one of the selfish reasons I bought this range is that most people don't have it.

    I agree that the range cleans up easily and the sealed burners work marvelously. I did have to have the simmer adjusted lower (personal preference). Someone else on this forum has the griddle and has yet to use it so I would be curious to hear about your experience.

    I have the grill which I have to say is a bear to clean (if I want to keep it looking nice). I did get a recommendation from the service person (who is wonderful [if you live in Southern CA]) for a stainless cleaner. Kleen King stainless cleaner - it's a liquid. However, I have had no luck in finding it although it was supposed to be sold at hardware stores. Hopefully, that product will work well enough so that I will want to use the grill more often.

    I await to read about your baking/oven experiences in the future.

    I've had the Capital Precision AG 36 inch range for a couple of months. I love the perfomance of everything -- the burners, the oven, and the broiler! It looks so solid and well-designed as well. It cleans up beautifully. I fried over 200 potato latkes on Sunday, and miraculously, there was no burnt on grease on the stove top. My only complaint is I have some faint scratches on the stove top, probably from inadvertently sponging hard food particles. Has anyone else had a problem with scratching? I generally clean it with a damp sponge and dishwashing detergent, then occasionally buff with stainless steel magic or W240. Everyone who walks into the kitchen is impressed with its appearance, but there is little name recognition.

    My 30" Precision has been in for about 3 months. So far it is great, very substantial, the knobs are solid and precise and do not get hot and it looks great. The high btu burners drop down to a very low simmer. I have not tried the melting chocolate on a paper plate trick. The range is very simple, a convection fan, igniters, and light. No fancy circuit boards or electronics to fry from the heat. I particularly like the center 25k btu burner for large pan sautes and to rapidly heat stock or pasta water. At Thanksgiving used convection oven to cook a high heat turkey. 475 degrees and 2 hours cooked a 19 lb turkey that was fabulous. My model does not have rotisserie, I use outside grill. Hope this helps.

    jab913--Thanks for the wonderful report on your Capital. Have been trying to make a decision on a rangetop and am leaning heavily toward the Capital, but have not had any REAL experience information to process. Love everything you have said about the product. I live in the Southern part of the U.S. and have to travel 6-7 hours to even look at one. Will probably do that in January, since redo is going SLOWLY!!!!

    julier1234- You mention the the grill is a bear to clean. Can you expand on that?? I am looking at the Capital because of the grill. Supposed to be very good. How is the performance of the grill??

    OK, let me chime in - as I've posted (many times) before, I also love my Capital. The burners are great - I have recently started doing a bit of stir fry and the 19K burners really do a nice job; ovens are great - I have the 48" w/ griddle - the small oven was calibrated and now is great - as is the large oven. The fans are very quiet. No issues w/ hot knobs or anything. I think anyone looking for an AG should defiitely take a look. I know, it's sealed burners, but they are fine by me. It's a workhorse AND it looks great.

    Only thing is, for some reason I haven't used the griddle -don't know why; I think i'm afraid to get it dirty. I alsmost did a couple of weeks ago when my son wanted pancakes, but I didn't go to the trouble of cleaning the grill first. So I put it off. Again. I will get around to doing it. Soon.

    The grill works great - better than we expected. My husband has assigned himself the job of cleaning the grill afterwards and it just takes a lot of time. Of course, he wants it to look like new so you should take that fact into consideration. A little like Coleen not wanting to dirty up the griddle (which is ridiculous Coleen ;-)). We have cooked beautiful steaks on it - perfectly seared on the outside with the grill marks. Love it otherwise.

    When I had my oven calibrated, the service guy commented on how clean we kept the range. That should give you some insight.

    Well Christmas is only minutes away and most of my baking has been done. Ovens performed quite well. Initially it took me the first batch of cookies to get things dialed in but after that I had a pretty good feel for it. The past few days I have baked unlimited batches of butter cookies which are a Christmas tradition for my family. Was able to use all 3 racks in large oven for cookies with excellent results. Along with these came pumpkin rolls, pumpkin bread, wheat bread, and several pies. Pies and pie shells came out looking fantastic. At times I had both ovens working at once and that sure was a time saver. Matter of fact I saved enough time that I was able to go the beach for a couple of days, ya gotta love California. Oven did a great job on the breads as well as the cakes for the pumpkin rolls. So far I am still getting acquainted but my initial tests have been quite satisfactory. Only minor flaw I have found is the smaller oven has a slightly hotter spot toward the rear. Tomorrow I will put it to another test with prime rib and ham. I expect that the oven will do well, the cook I'm not so sure. Hopefully everyones Christmas is filled with joy and peace.

    Well the Christmas day is done and the range was certainly put to the test. Today it handled the 13 lb. prime rib and 12 lb. ham with ease. Also used the smaller oven for 2 more last minute pies. Again the only problem I have found is the smaller oven does not have as even heat distribution. Was able to compensate by rotating pies halfway through. At the same time the cooktop was being worked for various side dishes. All in all it was a great cooking experience.

    Just wanted to alert people who might be considering a Capital - when I ordered my 48" 8 burner rangetop it was a 12 week lead time to delivery. Something to consider when planning. Mine is expected to arrive the week of Jan. 21st and I won't move in until April, so I can't comment on much else.

    FWIW, I saw one Capital Performance range in person and basically decided to buy my Precision rangetop sight unseen, based on GW reviews and speaking to the very helpful people at Capital.

    Congratulations smarge I am sure you will be very happy with the cooktop. When I ordered my range the lead time was about 8 weeks. Turned out to be a much longer wait. Very long story but it was not the fault of Capital. They and the distributor were actually quite helpful.

    My range continues to perform quite well. Even my wife enjoys using it.

    I think it's because the rangetop just became available. I was fortunate, my range was ready for me before I was ready for it.

    Congrats on your Capital. Renovations are going slow but when I reach the kitchen, a Capital it is! But has anyone used the rotisserie? If so, how is it?

    hey folks,

    I'm looking for some cooking help and advice. I bought a 36" Capital Precision largely on the basis of recommendations from this board. I love the look and the burners.

    However, I'm having some trouble with the oven. It seems to take a long time to get hot and doesn't seem to get as hot as I'd like. I had the service guy in to test the temperature -- and he found it was slight over 500 degrees. in other words, fine.

    And yet, it still doesn't seem right to me. I tried to make a thin-crust pizza on a pizza stone in the oven and it took ages to cook and never charred up. A smallish roast chicken came out spectacularly (maybe the best i've ever cooked) but took much longer than normal. normally a chicken of this size would take around 50 min to an hour, but this took a solid 1:20 to 1:30 or so.

    I haven't tried the convection yet.

    Any advice? Am I doing something wrong?

    I've seriously considering a 30" Capital range but can't find any reviews from long term users. I'm looking for feedback before I pull the trigger.

    Can any Capital owners comment on the long term reliability of their ranges?

    Hi, I am also looking for any Capital owners that have been using a range and griddle for an extended period of time. I am looking at the newer culinarian rangetop. and the ovens. Any feedback would be great. I really like the company and they have been very helpful in my slow remodel. I live in N. Ca and it is hard to find a location to see the product but most people that I talk to love the product.
