Old House Insulation

We are just beginning to remodel a 1908 house. Originally we wanted to save as much plaster as possible and only remove it where there is earthquake or water damage. But in one bedroom we discovered that behind the plaster the wall was insulated with shredded newspaper that was bone dry. And this is in a room with a fireplace. Now I'm worried about fire hazard and whatever else might be behind the plaster. Has anyone else had a similar experience or suggestions?
