Apple Fruiting Spur - Growth and Pruning

I have a Honeycrisp apple tree in its 4th year. Last year it fruited for the first time and produced quite a few apples, which were thinned.

At many of the spurs (many of which were downward facing or upward facing -- an undesirable branch direction) there is now branch growth coming out of the spur.

Is it okay to or a bad idea to trim these back to the original nub where the apples originally formed?

Any disadvantage to any particular direction a fruiting spur may be pointing?

Thanks!
Ross
