Love your choice of backsplash tile. I think you have a few options. You could stop the backsplash at hood level or continue it up the entire wall. On the rest of the walls, stop at height of cabinet. Whatever you decide to do behind the range, continue that pattern on right side wall where it turns. Hope these pictures help.

A couple of recommendations. Good luck!

Seeing that your cabinets & counter-top have a lot of movement, I would recommend a solid color for your back splash. The one you have selected is lovely but would read busy once its up. Look for something larger and simpler.

As for cut off lines for the back splash you could tile the range hood wall and the small wall adjacent for a big impact, but I think your gorgeous counter tops are the the one thing you want to draw attention to. So maybe consider breaking up that wall into something like pictured below. Where you carry the same height used under the cabinets but then extend to the ceiling just around the hood.
