We have a guide to light sizing and hanging that can help you! The general recommendation is to space them about 2 feet apart over an island, so you could definitely do a trio of pendants the long way. I think that would create nice, even light over the whole island, including the seating area. Maybe take a look around Houzz pictures to see how some similar islands are lit, too! That is a good average! If you don't do the 3 lights, space 2 lights equidistant from the center - not just in front of the stools. (ex: 18" from center) Depending on the other lighting your kitchen, 3 might not be necessary.
