You can it just won't store as long. The blanching destroys the spoilage enzymes and so extends the storage by several months. So if you don't want to blanch just plan to use it up within 3-4 months.

I've shredded it to put in soups and stews or for bread.

I'm also going to chop some of the larger ones, cook a little in chicken broth or water, then into the food processer for soup stock.

I didn't have a garden this year, but there is a person not far from me that puts their home grown veggies for sale on a table in front of their house. I can't pass them up on cukes and squash for .25 a piece. I loaded up yesterday and plan to do the same every couple of days. I've shredded zucchini to pout in soups and bread, but never though of shredding the yellow to do the same or whirling in chicken broth for soup stock. Thanks for the tips.
