Beth, I do remove some of the seeds and goo, because I use my old fashioned canning tomatoes, not Romas or a meatier type. So, I just take my thumb and scoop out some of the seeds and discard them, so that my salsa isn't too soupy. I don't drain them, though, as the salsa shouldn't be so dense that there are problems heating through consistently while processing.

Ok that makes sense. So just remove the core & take out some of the seeds.
