Cotoneaster Identification and Care

We've been told this is Cotoneaster and we are trying to determine how to best trim and maintain this hedge.
It's about 30 feet long and stands about 6 to 8 feet high and seems to be about 6 feet wide.
We love how thick this is and know it hasn't had any care for at least 10 years.
