Looks like concrete; the troughs are for water run-off (usually there is a dish drying rack above). Concrete is a beautiful material but extremely porous. It's "maintenance-heavy" - for best results it needs to be sealed every month or so. It also patinas (aka stains) very easily, which makes it not for everyone.

Can you get soapstone throughout the United States? I live in Mississippi and have always loved it, but wasn't sure we could actually get the material down here.

Oh yeah, soapstone isn't particularly difficult to come by in the US, I've had it installed for several clients.
I'm not sure about distribution in Mississippi specifically but I'd imagine you should be able to find a showroom that has it or can order it for you.

How would you compare the maintenance of a soapstone sink to concrete?

While Semihandmade talked about maintenance for a concrete counter top, soapstone would appreciate a rub with mineral oil every year or so. while it has a wonderful warm look, it is susceptible to small chips, which can be sanded and rubbed with mineral oil, creating a wonderful character

Soap stone is very soft. Nicks, dings and scratches happen easily, so you have to love patina and a ever changing surface if you decide on soapstone. It's also ph neutral (? I think that's the way to say it) which made it the surface preferred in science labs.

I think Frank is correct; we didn't make the counters.

I have had a soapstone countertop in my kitchen for almost 14 years. I love it and recommend it to anyone with a well lit kitchen. It is a great surface for a working kitchen. The first 2-3 years I was oiling the countertops every 10-14 weeks, but gradually became every 4-6 months and now once a year. Maybe the areas where I work more often I oil every 6-8 months. It is well worth the little bit of maintenance for anyone who truly works in their kitchen!
