Maple should be close in appearance. What are the paint grade" ones made of? They won't be invisible in any event, perhaps you need to turn them into a "feature", using something contrasting. Pocket screws on an exposed surface is sort of an unusual thing to do. Is that really the best way to put this together?

I couldn't find what the paint grade ones are. I'm not using the pocket holes on super exposed surfaces, they will be on the back whenever possible and on the insides and undersides when I can't avoid it. So they will really only be visible in certain areas when you are looking up. Because of this and because it's in a closet, it's not the end of the world if they don't match exactly but I'd rather not really see them at all. I've had good luck with matching plugs (in pine) being nearly invisible.

There are better ways to assemble it without it being visible, but I don't really want to spend the extra time. As it is this is like 8 sheets of plywood for the project, and is going to take me probably all winter (I have 10 month old twins, so free time is not something I have in abundance, haha).

Thanks, but I don't have any problem finding the plugs, I was looking for advice on what kind of plug to use to match birch, as Kreg doesn't make birch plugs.
