Bitter beets

In many years of growing beets, I had never before grown bitter beets. The regular beets are mildly bitter, and the Chioggia are really bitter. We had a wet first half of the growing season, and a dry second half. I was away for work a lot and the garden was not that well watered. They are somewhat drier than in years past (woodier?).I have made sauerkrauts with some of them and even the kraut is poor (I made some regular kraut the same week end, it is excellent). Usually beet kraut is my favorite.

Comments? I am considering using the Chioggia seeds for micro-greens, because they are close to inedible.
