Oak paneling - matching the color

How difficult is it to match color of oak (i believe) paneling from 1983? Removing wet bar and replacing with oak paneling that matches room. Then would like to clean all paneling, probably de-gloss, and the apply couple coats of satin, chocolate glaze to darken edges and maybe not look so 1980ish. Any thought or tips are appreciated.

I take a door or drawer to Sherwin Williams with a raw piece of the same type of oak. Within a day, they will have custom mixed a perfect match. As for the darker stain process...i apply stain over entire side of door. Wipe off in long strokes, top to bottom, keeping things even. The stain will settle in grooves. Once door is done, go back with a detail brush to those grooves with extra stain. Apply satin poly over finished product. The satin poly will be your final sheen as it is your last application.

How would you treat or prep wood before doing the darker stain process? Anything special besides clean wood?
