Small Galley Kitchen in NYC

My kitchen has low ceilings and I cannot use cans. What pendants or type of lighting would you recommend for updating our small kitchen. The building was built in 1907. We are using white subway tile for back splashes and running the white cabinets all the way to the ceiling. So everything will be white to bounce off light. But we are stumped on the ceiling light fixtures.

We had a kitchen in a 200 year old house so the ceilings were only about 6 or 6 1/2 feet. I could touch the ceiling and I'm 5'4".

We chose track lighting. It fits close to the ceiling and can be focused on the areas you want lit.

You might take a look at low profile led lighting such as the Pixi from Home Depot for ambient light combined with under-cabinet lights for task oriented lighting.
