NEVER WILL MISS A DOUBLE BOWL! They are horrible when entertaining or having a large family clean up day

It's really a preference based on how you use your sink and your prep/clean up habits. I personally like two sides- one as a drying area for larger items/silver and for easy access to my compost bin. If it was under the counter, I know my kids wouldn't use as frequently. Thanks, I believe I have found a Blanco sink I like. It's just the idea of going to one bowl and where the drain is.

An apron sink IMO is not modern and fireclay for sure would be my last choice of material maybe a stainless one will give you the look you want.

Susanprimo good point , I place the dirty dishes on the side or in dishwasher and then clean my chicken, then i clean the entire sink More and more today all of my clients are actually getting rid of them... But of course no one can make that decision for you but you.

A modern looking apron front would be the Kohler Vault, which is a stainless apron front that can be fitted on standard cabinetry. There may be one that fits on a farmhouse sink base too. There looks to be one with a 50 / 50 divide and one with a smaller/larger bowl divide.

I am going from a double bowl to the single bowl Whitehaven and so I understand the conflicted feeling over changing what you are used to.

This is what mine looks like - not my kitchen. Notice how the short apron style can go on a standard base - no need to cut down the doors:
