Microwave/Oven help. What do I really need.

Do to much research/luck I was able to purchase a Monogram Advantium Speed Oven (240v) at a great close out price. I am really intrigued by the concept of a speed oven although a little scared about how much of a learning curve it will entail. I was sold when I read that it makes brownies in 6 minutes (and I found one at clearance price for not much more than a built in microwave). I purchased the Advantium months ago and was waiting until now for delivery as our kitchen remodel is going slowing. In the mean time I also found a Viking 48 inch range at another good close out price. It seems that I can't seem to pass up a good deal.

The ovens were supposed to be delivered yesterday but only the Viking was delivered. I have now been informed that the advantium is damaged and the best the company will do is to give me $200 against the price of a new one. I can't really justify the price of a new advantium since we purchased the large range.

So I now need to decide on what to get for a microwave. Do I need a speed oven, microwave/convection oven or just a microwave? Do be honest, I know that I just need a microwave since the Viking has two ovens both of which are convection. But how nice is it to have a speed oven?

I haven't really research microwaves at all. I am have really run out of steam at this point. I think I really would just love to have some opinions on what I should get.

    If you can afford it you should get the convection. The once a year time you might need it will be welcomed and I would love to have that for everyday and not heating up the house.

    I really hadn't thought about that. I was just thinking I would use the smaller of the ovens in my range. It appears that I might be spending as much for a micro/convection combo that I was going to pay for the advantium. I just lose out on the speed oven. Bummer

    I have a Miele speed oven and I love it. It's our go to oven and we use it every day. But we only have one other oven-in our 36" range. That said I don't think you need a speed oven since you have the two ovens in your range, both of which are convection. I think all you need is a microwave, unless you really feel the need for a third oven. I love that the speed oven heats up very fast and food cooks more quickly in it, but not a lot more quickly imo. And we like having a microwave but didn't want a stand alone microwave since we don't use one very often. So a speed oven was the perfect option for us. If I had a 48" range I doubt I'd feel the need for a speed oven too unless I was a huge baker which I'm not. I think your smaller oven will be perfect for everyday much like a speed oven.

    Most of the microwave/convection ovens I'm aware of allow for combination cooking. What they don't do is allow for changing much of the way the combinations work. The Sharp has two fixed temps and powers. The GE I have lets you vary the temp but not the power. (microwave power). The Bosch does some but not that much, and through their pre-defined menues. The Advantium will let you play with the mix in any way you wish.

    Having the microwave/convection oven will allow you to do simple things that you may not want to fire up the Viking to do, like biscuits, half-dozen cookies, small frozen pizza, etc.

    I think a speed oven on top of two ovens on your 48" range seems like overkill. You could get a convection microwave in case you are worried that your ovens will take a long time to heat up. My very unscientific observation is that people with large ovens such as those on a 36" range are the ones who best appreciate a speed oven. We have have two small ovens, neither specifically speed (a european sized one in our Lacanche and a Gaggenau steam oven) and they are both fast enough for us. We also have a little cheap microwave hidden in a cabinet to heat water/popcorn but hardly use it.
