That messy mortar look is lovely. I used antique brick on my house and love the look.

would white brick with the white trim and white garage doors be too much white? We really don't know what we want, don't want it to go out of style but don't necessarily want it to look like all the other classic red brick homes.

I like gray brick. I also like white brick and I prefer that garage doors be the color of the house so no, that would not be too much white. I really dislike orangish brick. One style I like includes some bricks that look painted. I think the look is called "used brick" see below
