Once you have addressed the water issue why not check out luxury vinyl plank flooring

Vinyl will be one of your better choices. A loose laid plank will offer plenty of opportunity to get things fixed. Of course the best bet is to deal with the humidity issues (dehumidifier tied into AC unit) but in a condo that won't always work.

The mold remediation team will come in a do what needs to be done. If this is on concrete subfloor then the concrete can be sealed (properly...but a professional company that will use EXPENSIVE stuff) and then you can have whatever floor you want.

Until you fix both the humidity in the air and the humidity come up from underneath the floor you will be working with stuff like vinyl. Wood, bamboo, laminate and even cork will be a "no go" until all of the issues are dealt with. Air humidity is going to be the biggest "floor killer". Deal with the humid conditions (dehumidifier) to keep things below 60% humidity (45%-60% is ideal...and needs to be met for even the worst vinyl floor).

Like others have said, solving the humidity issue correctly will allow you to use any floor you want. But getting rid of all humidity, especially in humid climates, is not cheap. Finding a flooring solution that is less sensitive to moisture is the more cost effective solution.

Vinyl plank is a great solution, because it has the right mix of moisture tolerance and livability. Unlike porcelain tile, it is softer to walk on, and looks more convincing in wood grain designs. It is also generally more cost effective. Vinyl plank made with virgin PVC is virtually waterproof, and won't expand or contract if it is exposed to moisture. There are also some really nice designs available now, in larger plank formats.
