Beautiful kitchen. I think a beveled white subway tile would be perfect.

People usually tile above the range, as that (with the sink) is one of the main splatter zones -- wait until you have your hood in. As for the window, you can go around it to cabinet height, around it to the height you do under the hood, or all the way to the ceiling. Just depends on taste.

I'd go with a light backsplash, maybe a white glass which would keep things light but add some sparkle. Tons of choices, though, for this quiet set of main finishes -- could use marble, or metal, or bring in a pattern, etc...

Tiling around the window is your call--there is no wrong answer. If you have a tendency to splatter sauce or other food while cooking, I would tile above the stove.

Maybe a touch of eggplant to go with the gray, type Purple tile into houzz and see Winterscape and Plum Crazy as starter ideas. Or something that mimics the pattern in the glass cabinets which are awesome. I like tile about halfway above the window, if you go full, accommodate any Roman blind brackets etc in your plan.

Since nothing is busy I think you should do something fun with the backsplash like a crackle tile or even metallic. I suggest tiling around the window ending at the bottom of the uppers. No need to go to the ceiling.

Can you tell us what your pendant lights are. I love them!

I definitely plan on tiling above the range I was thinkingredients of doing an inset or something different above the range. Thoughts?

I would not do a mosaic insert. A differently shaped tile, a mirrored tile, a stainless tile, would all look good. I would not do a subway tile here, unless it was mirrored or metallic. Back painted glass would look good too. Search Houzz for These, you'll see all kinds of kitchens using these various types of backsplashes.
