Bertazzoni Oven temp question. Won't exceed 425 deg?

Hi I am the proud owner of a new Bertazzoni range (36" all gas, Pro model.) It's been great so far, but one thing we haven't been able to do is get a really high heat in the oven. Baking at 350 or 375 has been very straightforward and the temps match that on the dial almost exactly. I've got two thermometers in different locations inside. The range was originally set up for LP, but I had a plumber convert it to natural gas. I doubt that matters, but maybe it does?

However, trying to get up to 450 or 500 has been a problem. Any ideas? Also: is the center burner supposed to click when I am turning on the oven? The documentation is a little vague, and this is my first modern oven, having just upgraded from a vintage Detroit Jewel ;)
