Flower stem and root question

About a week or two ago, I brought home this anacampseros telephiastrum and it had a long flower stem growing and falling over the pot. I repotted it and put it in a window that gets decent sunlight. Two days ago, I watered it for the first time, and the next day I noticed that the flower stem began to grow straight up instead off leaning off the side of the pot. Today, it looks like it's towering over the plant itself.

When I purchased it, that flower stem was hanging over to the left and over the edge of the pot. Is this normal? Did it just have a good drink of water and is stronger now? Should I be concerned?

Also, I found this cutting on the floor and asked if I could take it home since it didn't seem to belong anywhere. The employee at home depot said sure, so I just through it in some mix and let it root. I noticed today that the leaves on the stem are growing roots off of the stem. I know the plant is really etiolated, should I just take the leaves off to propagate the plant and leave the stem to grow a new plant and the head of it to grow another? Thoughts?

I didn't take a picture of the head of the plant, but the new leaves are growing plump and tight.
