This kitchen measures 13'6" from sheetrock to sheetrock across the stove wall.

My kitchen is the exact same width and I see myself doing the same theme in my Kitchen. Is there much cost savings adding open shelving like they did for the cabinetry?

Whether there is a cost savings or not depends on who is building the cabinets.
In general it's probably easier to just put doors on top because there are fewer events to manage.
We did the open shelving in this kitchen as a way of modulating the space. There are other projects similar to this one on our website.

An interesting thing to note in this kitchen are the ad hoc shelves, If you look close at the ones with the jars and the ones at right of stove you will see that they are suspended on simple cleats as an afterthought. It is this cobbled-up-ness that makes a kitchen friendly, I think.
