Your plant is crawling to the light because its too dark. It is severely, severely etoilated, slowly move it to a higher light source such as a shaded east-south-west window, or get a grow light.

The etiolation won't fix itself. You should cut the top, callus it,root it and plant it. Cut back the stem and that will probably grow offsets. The leaves you remove can be propagated as well. But all that will be for naught if it doesn't get much much much more light

I figured repotting would be the best solution since its gotten so out of hand. When you say "cut back the stem" what do you mean? I will definitely be placing it in a better window from now on. I had it in an east facing window and it had direct sun 4-5 hours a day. Figured that was enough but I can see not.

Graptoveria 'Fred Ives' - they will grow longer stems and partially 'naked', but yours really needs much more light. Plant should be able to support itself, weak stems will droop and the leaves grow spaced too far apart. The rosette should be tighter, and in good light, the leaves will color up. It will grow well in full sun, but needs to be acclimatized to it slowly to avoid sunburn.

Richard, they mean to literally behead the plant (knife or clipper), at which point you will have a short stem sticking out of the soil and the top part of the plant with some stem. Don't leave that stem too long. Let that top part harden off over a period of days or more, in other words dry very well, and then stick it back into soil so it can grow new roots. You can search how to root a cutting, which is what you will be doing.

The pot also needs to be filled more with the mix, the original plant is set too low down which wouldn't have helped with its etiolation when it was younger.
