saved by pickles!

It's getting close to the end of our (first) summer season, and we're starting to get sick of stuff we craved earlier. Had a great crop of beets this winter, which went from RAVISHING!, to pleasant!, to really nice, to OK, to "oh gawd" as we ate more and more. Same with tomatoes in the spring. I think we're getting buried in cherries. Might be turning into a tomato. Have been eating them almost nonstop for months.

But I decided to try some simple fridge pickling for beets and tomatoes. Fantastic! They should last, in the fridge, for several months unprocessed. What a great way to conclude the season. They're excellent on salads at least, and probably pretty good plain. I think I'll do this every year. At least for beets, I've used ONE JAR, and as the jar is emptied of pickled beets, I just throw some more cooked ones into the brine mix. The never-ending pickled beet jar.

Just wish there was a way of doing that with eggplant and melon.
