Either could be a great choice IF its part of well-designed remodel. There are many factors that contribute to a great kitchen and this is just one component. What matters far more than whether you choose quartz or granite is making sure you stay away from generic choices (anything that big box stores have on sale is a good indicator of that). Also, how well the countertops integrate into your overall kitchen design will out-weigh whether its quartz or granite. I'd suggest working with a great kitchen designer whose work you love to help you make the selection, and tweak the other elements of the kitchen if needed.

Assure your husband that quartz or granite will not matter to most buyers, as BR said the overall finished product is what counts. Maybe 10 years ago "granite countertops" used to have some cache and better marketing, but nowadays most buyers are savvy enough to know many other counter materials are just as good as granite (or better). It really is a personal preference. Unless you get too taste specific (this doesn't mean to do what's popular; just nothing outrageous), a thoughtful well-designed and quality-built kitchen should afford you a great return on investment regardless of whether you use quartz or granite.
