Look wise, backless or with back will work. It really comes down to what you prefer. Personally, I choose comfort/function first and then go with what looks good with those perimeters. In this case, I'd look for attractive stools with backs.

I had the same dilemma and decided to compromise with low backs. They work really well! The low back is just as comfortable as high backs, and it's super easy to reach over the top to reach the counter. There are tons of styles, I just grabbed one image as an example. If you are interested in minimizing the visual impact of the back, stick with ones that are not upholstered on the back.

Good Morning, I'm assuming you'll be having many family meals around the island. Buffets don't come around as often. Go with the seats with backs. Pick a comfortable seat in your favorite texture and color and go for it. Your kitchen is beautiful. Enjoy many happy meals with your loved ones!!

Be sure to "sit test" an array of those with backs: check for some ease to get into seat (tall and short people), check the depth of seat front to back - my 5" friend isn't comfortable with her feet swinging. Foot rest helps, I'd recommend with back - adult comfort and keeps kids somewhat confined whether 3 or 13 years old. Some rotation is fine - beware of 360 rotation - any one can tempted to spin excessively - maybe not in your family. 10 years cottage experience, 6 stools for eating breakfast/lunch, with sink in island, ages 1-25 plus 10 adults. It was great!

I went with no backs so that you could face either direction. Will there be any reason that people on the stools would want to face the other way too? They were also easier to get in and out of if they are close together. If they are spread out, you might be fine with backs.
