Can Elberta peaches be picked a bit before completely ripe?

Our Elberta peach tree is loaded with big beautiful peaches that look ripe color- wise but not 'dead ripe' to the touch! The birds will get them all if we leave them on the tree so was wondering when/if they can be picked if not fully ripe ... & how to tell? The ones the birds have begun to eat 'seem' to have been ripe but was wondering if picked now if they will ripen some after picking? And if so, where to store them to ?ripen more?

Oh, hubby swears he will top the ?dwarf' tree this Fall & keep branches lower so easier to 'net' the tree. Every year the %#* birds get the fruit first & even manage to find any small opening in the netting to get inside & EAT! :(!
