So much depends on the specifics: size of island, size of sink( if large single bowl that can contain a variety of dishes or pots that are soaking ) , and is sink and sizing such that guest would get splashed or not much usable drink and snack space there, location of dishwasher- if can get in habit of partially loading to keep island clean) , orientation and views to other room, how “ cooks” use the kitchen, meaning do you have lots of other counter space or separate work zones or do you need island level for certain projects; would you use island for buffet service IF it were one level & cleaned up ( I can think of lots of casual entertaining scenarios where I have bypassed or contained any kitchen mess- horror but would like buffet service & circulation), are most family and guests agile with higher barstools. And so on.
I have also seen some “ partial screening” movable decor on one- level islands- not always great to my eye but you could get ideas on options.
