You asked if the Purple Dragon carrots kept the purple color after canning, and they do, but the reddish center is also dyed purple, so they are all purple. they'll also color lips and teeth, which is why the kids call them "zombie carrots", LOL.

Here's what they look like canned on the shelf, next to the Amarillo carrots, which I canned with brown sugar and orange juice...

Yeah, as the grandkids say, "pretty awesome". (grin) They like the brown sugar glazed ones the best though...
