I would paint all the trim either wall color or the color of the white wall with the built-ins. And I'd paint the cupboard and shelf there too, as the wood stands out oddly. Doors seem ok.

I honestly can't parse out all your other paint questions, sorry. I think one color for an interconnected space like this is the way to go, and I'd skip accent walls since your home already has plenty of interesting features...

If you don't love the fireplace, then you could maybe reface it with new stone or tile. But I'd wait and settle into the feel of the house first. The current finish is mostly inoffensive.

When you say "creamy" I assume what you really want is a warmer white, and I agree. Consider Ben Moore's Navajo White. If you decide to paint all the oak one day, go with their White Dove. Here is how they look together.

I would do one color throughout your house and think painting the trim and leaving the wood doors would be a nice update. I like your rug:)
