Kristin- unless you are a trained professional, I cannot recommend that you "design your own floor plan" I am a trained professional and would not do so without peer assistance, especially in the closets, kitchen, baths, transition spaces ... I have walked into many new homes these days with spaces that were not well thought out though they had something (high ceilings, operable glass walls) to make you feel as though it was a high end home ...

... keep looking at canned floor plans until you find one that works for you .. this is not an amateur exercise . .for instance - the curve on the island is necessary to deal with the exterior wall corner nearby here. ..

I'm just looking for suggestions and ideas to improve this plan and will be bringing it to a professional once I have a better idea of how I want the layout to look.

Looks like the utility mudroom will operate as a pantry if the corner unit provided in the kitchen is too small. The bay window in the Master Bedroom is the only real architectural feature in the room - you may want a less traditional application, but then the entire façade would be wrong - it needs to extend beyond the wall of the bath to have light and privacy . . .bath layout is functional luxury in master .. what were you thinking there? Do you have some photos of what you want or did you simply desire two walk in closets for your master?

this is what I've sketched out just quickly with no measuring or giving a whole lot of thought. The design I'll be going for is a more modern/Scandinavian design.

Kristen, do you have a lot on which you are building this house? If not, you may be putting the cart before the horse, so to speak.
I'm certainly no expert but we have built several houses for ourselves. Very often it is the lot that determines positioning of the house and where key elements can go.

Share your LOT and Wish list with an architect. Any other method delays the process, and is a waste of time. That's what the pro is for. The marriage of site, desires, and actual possibilities, along with budget..

IMO this is a list not appropriate to this site , you need an architect I honestly liked the 1 st layout better than your sketch and I never put WI closets where you need to go through the bathroom to get there in a scandanavian home you would never find all these separate rooms and so many wasted spaces Get an architect ASAP
