I think that's a great idea. You may want to consider just a set of lower cabinets with countertop, that way you have some prep/work space right next to your ovens in case you need to put something down to open the doors. That wouldn't open the space completely, but since you could see into the space, it may work. Plus, extra storage is never a bad thing.

There seems to be a ton of storage in that cabinet so make sure you know what you will replace it with but I do agree it needs to go and remember it will now open up the kitchen that will be the first thing guests see when entering I find the cabinet is just odd there and i would not replace it with anything

Also, remember that if you're not replacing the flooring, there's likely no hardwood underneath the cabinet, so you'll have to have that patched in unless you put a set of lower cabinets in that space. That's likely costly depending on the age of the flooring, and matching the finish.
