Need Lots of help with details

We are in the pretty early stages of a major kitchen remodel. We will be taking down 2 walls, one is a 25 foot load bearing wall, to double the size of our kitchen and open it to our dining room. (I apologize in advance, this is going to be long)

As of now the purchases we have made are our cabinets, granite and sink. The cabinets we chose are Kraftmaid Hamilton from HD, in Canvas (perimeter cabinets) and Maple stained Chestnut with an Onyx glaze on the island. The granite we chose is MSI Salinas white (although we were told we could change our minds once at the stone yard should we see something else we want), and the sink is a rectangular 32", 10" deep SS Kraus undermount. Our floors will be the preexisting 2 1/4" red oak (some boards will be replaced) but we are not sure on the stain yet. Appliances are all GE SS.

My style. Our home is a 1940 cape cod with craftsman touches. The cabinets are double panel shaker, so they kind of have a mission feel, but not overly. I want this to be a bright space, but with some dark finishes, I'll include a picture of our inspiration kitchen that is a favorite that we've found. Also, 2LittleFishies' yellow kitchen makes my heart skip a beat. So I'm looking to mix a craftsman/arts & crafts/mission style with farm country charm. I love faucets with detail, and would like one with a pull down/pull out sprayer, that isn't a real pain to clean (I have an ORB victorian style faucet in a bathroom that is a nightmare to keep clean). The faucet I love the most that I've found is probably the Kohler Artifacts, but I also really like the Delta Cassidy, Moen Brantford and Woodmere, the Brizo Artesso, Grohe Bridgeford and Rohl Country Kitchen faucets. We would love a backsplash with handmade or hand glazed ceramic tiles. I don't know where to find some though, as we live in the Catskills and I haven't found a distributor for the tiles that I like. I like RH, Aubrey, and PB Newport for hardware, and lighting, i kind of don't know where to begin! I am also very unsure about what finish to go with. I love the look of the cast iron or ORB hardware on light colored cabinets, but then I'm not sure if I want everything else dark, or how to mix metals. We also need to choose stools for the island.

As far as budget, here's the price ranges I'm thinking.

Faucet: under $350 (I've found all of those mentioned on Amazon Warehouse for less than that so far)

Tile: Probably less than $25/sf because not a whole lot of backsplash, so we can kind of splurge here.

Hardware: I think I'd like to stay at or under $10 a piece (handle or knob).

Lighting: Around $1,500 for all lighting (the main ceiling will have recessed lighting that is not included in this budget)

Stools: (We'll need 3 or 4) and I think I'd like to stay under $800 for all.

So I'd love to hear suggestions, ideas, all that! I know what I like when I see it, but I'm not always sure about recreating it. Looking forward to your ideas!
