I eat them as they are, but they can also be dehydrated. They are a common ingredient in teas.

After cleaning them, and cutting off the stem side and the fuzzy blossom end parts, I cut them in half and dry them. Once dry I scrape out the seeds to throw out. I put a good spoonful in each pot of tea. Of course, I'm growing a rugosa rose variety that makes hips the size of a quarter.

Once dried they can be added to any number of things to kick up the flavor, as they are quite tart. Love the jelly though! It can also be added to things like barbecue sauce, applesauce, etc.
