The salt doesn't work unless you want to live in a plant devoid desert. If you want to get rid of the bamboo, the best method involves some serious excavation. Otherwise, a constant cutting back and the application of concentrated herbicides to the cut stems can seriously reduce their vigor over time.

If the grove is not too large, the safest way is to cut ALL of the culms down to just below the ground level, and cut ALL new growth within a few days of it's emergence. The grove will eventually use up it's stored food reserves, starve, and die. There is NO easy way to get rid of running bamboo. Herbicides will work but will leave your soil damaged for any other plants that you want there in the future. Excavation works well, but can be expensive, and you must remove ALL rhizomes, or the bamboo can regrow. Cutting the bamboo then covering the ground with tarps, does NOT work unless you use thick tarps or some other items such as sheet metal to cover the cut down grove.

If the bamboo is in your yard, AND your neighbors yard, then getting rid of it in your yard will only be temporary since it will keep coming over from your neighbors.

If you have a cow or goat, they like new bamboo shoots, and cows will eat the mature leaves as well...they'd probably eat the whole darn thing.

I guess it depends on the type of bamboo regarding the cows. Even in the drought, my cows never eat the bamboo here. They will nibble on the newer leaves, but the groves grow freely and even the deer do not do enough damage to stop it from spreading freely. Wild hogs will uproot some of it, but nothing keeps it under control or eradicates it....except man.
