Countertop height looks more open and spacious, plus know place for crud to accumulate where the counter meets the back. Also can spread food out for buffet style when entertaining.

Remove bar top and leave the pony wall. You don't have sufficient space to use the existing bar.

I just remodeled my kitchen which had a tiered countertop like yours. I was told by several designers that the look was dated so I went with counter height throughout the kitchen. Because it will probably be a long time until you remodel again, it's best not to opt for something that already looks outdated.

In all honesty, I would keep it as it is, I think it would be more practical to use and it adds a separation for when entertaining -for example you could have platters of food on the bar area and keep drinks on lower along with glasses (on top of bar they might fall), with a vase of lemons or flowers on bar near wall, it would look fabulous I say!!

I have the same situation although my sofa is close by and I wonder lower would make it less congested. My house/ lake home will be 10 years old.
