Kitchen Island Lighting

I am updating my kitchen island lighting and am thinking of purchasing two "MODERN PENDANT LIGHTS" from Houzz. My island is 60"x27". I will supplement my island lighting with some track lighting. Are two pendant lights adequate enough for the island? And what type of Edison bulb should I purchase to go in it?

It's only a 5ft island so two 8" or so or three very small.... what does the track lighting look like? Do you have a photo?
