With a Meyer there is no need to zest it. Just peel with a vegetable peeler and chop it. The reason is that, unlike most yellow lemons, the peel of the Meyer is not bitter. Commercially oil extraction is done with a french press.

Good to know! My grandmother made a relish by pureeing entire lemons with spices and then cooking it down to a sauce, and your comment made me think I should try it with Meyer!

Susanne, pressed and steam distillation for pure oil are just a few methods. You would need around 300 lemons to get a single 148 ml bottle of pure oil.. That is a lot of lemons. If you would like to learn more about the process of steam distillation and other ways to distract the citrus peels into pure citrus oil then YouTube has a number of videos on various methods. Just be aware that some of the diy videos are actually methods to create infusions and are not pure oils, big difference.

300 lemons, means I have to have at least 10 trees with about 30 lemons on it. Doable sure ;)

Lol, John. I know you and many others love the Meyer lemon, and it is good, but I prefer real lemons for their pure acidic juice and rinds. Nothing else compares to the real thing.. :D

I'm with you Jinny, I know we are probably in the minority but I love the clean tart flavor of a traditional lemon.
