Since the ceiling is not level, it would only make sense to manipulate the drywall. You could paint the ceiling and the little bit that did not get covered by tile gray to match. You could either build out the gap with drywall or fill in with thin strips of tile. Taking away the contrast of white and gray at the transition should take away the obvious "unsquareness" of the space.
