1) not sure how a one-story home is a loft, but maybe that's just a term that means something different where you live

3) your kitchen and dining areas are very crowded, while there's a lot of wasted space at the entry and in the great room at the bottom. there must be a better way to shift the space around and get more elbow room where it matters...

Interesting. However the third bath must be there or somewhre allowing access to/ from the backyard...

I don't like the bathroom being accessed by the dining room. That feels like a weird place to me. I understand that you want it to be accessible from the outside, but the location doesn't seem private enough to me for guests, and your other bathrooms don't seem accessible to day guests who might feel more comfortable in a more private setting. What if someone wants to use the bathroom after they are finished eating and other guests are still at the table? Isn't that going to be weird?

Re bathrm off DR: codes vary greatly from area to area, but make sure that bathrm conforms to local regs. Where I live, a bathrm cannot open directly into an open kitchen/DR area like yours, when it's new construction. There must be a hallway, a corner turn, or at least 2 doors to pass through.

Also: you're going to need a really, really powerful rangehood if you cook a lot. I dearly love our open plan LR/DR/kitchen, but odors go EVERYWHERE - especially foods like burgers or deep-fried items!

Me, I'd want a bigger kitchen. I'd pull that kitchen counter out into the Activity Room, and create an L-shape peninsula into the LR. Easily doubles your counter space, which it looks like you'll need if you're going to seat 8-10 for meals every day.

Also, it doesn't look like you've allowed sufficient space for pulled-out chairs when people sit down. There looks to be very little room for people to get by if others are seated at the table. You don't want kids/adults in the Activity Rm having to go all the way around your counter and walk through your kitchen aisle in order to reach that Bathrm #3.

Build a post and beam house. Once the frame is up, you can then decide where to put the walls.

Or do a truss supported roof…great, except you won’t have a ton of attic storage space…but, who wants to store in an attic? Not I…too hot, too hard to access, and too hard to bring it up or down...

I am no architect, but you should consider a building which needs no support walls…then decided. Easy to look at a piece of paper…whole ‘nother story when you are actually inside.
