Winter veggies in hanging planters?

Just finished making these three hanging planters from salvaged fenceposts and lattice pieces. They are shallow, 4' long by 6" wide & 5" deep.



I'd love to plant them with salad greens or other edible winter-hardy plants. We live right on the border of zone 6b/7a, mild-moderate winters, below freezing but rarely below teens. The spot gets plenty of light. What sort of vegetables, greens or herbs would fit in them and tolerate our winter?

Also, what is the best way to fill them? I am lining them with burlap and I have organic potting mix and a bag of perlite. Will this work?
