Kitchen countertops advice

Would it be weird to have quartz on one side of my kitchen where the sink is and butcher block on the other side where my stove, oven and food prep area are? It's a galley style kitchen. Here's some of my reasoning for wanting one side with quartz and the other with wood... Floors will be black/gray slate tile, white cabinets and the hard surface would be white/grey. I want to warm up the kitchen with the butcher block surface and some live edge shelving. I don't want to do butcher block for the surfaces around the sink, since it is prone to water damage and don't want to overwhelm the kitchen with wood. I feel like this would provide the best of both worlds and be unique. If we had an island I would feel confident about doing the island in butcher block, but I just haven't seen this in a galley kitchen before. Taking advice! Thanks!
